Castell's is supervised by the Vaad Hakashrus of Flatbush and operates as a kosher dairy restaurant. We work with Chalav Yisrael milk, Pas Yisrael bread, and pescatarian proteins—no meat, no poultry, no shellfish. This is not a limitation we work around. It is the framework within which we build something genuine. Italian cooking has always been resourceful, built on what the land provides.
